Giveaway Winners and Super Pumpkin Chowder

One of my friends, Shauna, sent me this recipe and gave me permission to share.  OH MY!  This is seriously yummy!  We had this for dinner the other night...AMAZING!

Pumpkin Chowder

4 cups peeled and cubed potatoes
1 cup sliced carrots
1/2 cup chopped celery
2 tbsp chopped green pepper
2 cups chicken broth
1/4 cup butter
1/3 cup water
3 tbsp flour
1 1/2 cups pumpkin puree
1 1/2 tsp salt
1/8 tsp pepper
2 tsp parsley
1 tsp sugar
2 cups water
1 cup milk
grated cheddar cheese


In a heavy pot, combine vegetables and chicken broth. Cook at medium boil for 10 minutes. Add butter. Mix 1/3 cup of water and flour with a fork until smooth and pour into soup pot. Add pumpkin, salt, pepper, parsley, sugar and 2 cups of water. Reduce heat and cook on low until vegetables are tender (about 30 minutes). Stir in milk and heat until hot. Serve bowls of soup with a garnish of grated cheddar cheese. Serves 8.
 
Ok, so when I made this I put in dried carrots (1/4 C) and increased the first water a bit (1/2 C) I omitted the celery, and the peppers. (because I didn't have any) I added red pepper and garlic spice.  The rest was basically the same.  I tried to mostly follow the recipe (because according to my dear hubby, I find that next to impossible) so that is all I did to change it.  Totally yummy!  We had company when I served it, and they also loved it.  :)

Just a Bit More Pumpkin...

Pumpkin Muffins with Cream Cheese Icing and Nutmeg Sprinkle

(I really should think of a smaller/shorter name!)  :)
2C Cooked pumpkin
1-1/2 cups sugar
1/2 cup  milk
3 eggs
1/3 cup canola oil
1/3 cup unsweetened applesauce
3-1/3 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon baking powder
3/4 teaspoon ground allspice
1/2 teaspoon salt

1. In a large bowl, beat the pumpkin, sugar, milk, eggs, oil and applesauce until well blended.
2. Combine with the flour, baking soda, cinnamon, baking powder, allspice and salt.  Mix until just blended.
3. Bake in 350F oven for 12 min or until lightly browned and top springs back when touched.

Cream Cheese Icing

1/2 C Butter or Margarine
1 Block of Cream Cheese

Cream together and add Icing sugar until thick and of icing consistency.

Spread onto cooled muffins and sprinkle nutmeg on the tops.

Your Pumpkin Links

Here we go...

Pumpkin recipe roundup!  :)  Thanks be to all who emailed me links...or posted about it.  Hope you find something you didn't know you needed till you found it!  :)

Pumpkin Streusel Bread.  Cassi's pics make it look to die for!  I am quite possibly making it today! 

Pumpkin Oatmeal Cookies.  These look like an oatmeal cookie lovers dream, pumpkin, oatmeal and icing!

Pumpkin Stew.  There in no pumpkin in it per sey, but you cook it IN a pumpkin and scoop some out with each serving. 

Pumpkin Cupcakes with Cinnamon Buttercream.  (not a big fan of Crisco in my buttercream, but adding cinnamon to my favorite buttercream is a GREAT idea!)

Belgian Waffles.  I just made pumpkin pancakes yesterday morning...and let me tell you...pumpkin for breakfast with syrup, Mmmmm Mmmmm good!

Pumpkin Dip

Pumpkin Ginger Scones.  Mmmmm scones!

Pumpkin Filled Biscuits.  G is actually making these for his "cooking class" on Wednesday.  I am excited, they look delish!

Gingersnap Pumpkin Pie.  I think it would also work as a no bake cheesecake.  I am going to make it that way.

Canned Pumpkin Pie Filling.  I have done it this way before...super nice to have on hand!

Pumpkin

One of my very favorite things about fall is the abundance of pumpkins.  (and pumpkin recipes out there)

Seriously.  Pumpkins are one of the yummiest things ever.  (except for in pie, then I prefer squash...)

On of my dh cousins told me I could have the "garbage" pumpkins that the farm couldn't use.  So we went out and got 6 large ones (there were literally hundreds left).  There had been a rather large freeze so I had to be really careful about picking good ones.  I had to chuck one because it rotted, but the rest have been keeping me busy.  Bagging, canning, grating, and now I must roast the seeds.

Today I really wanted to use some grated pumpkin so I took a few recipes and put them altogether for these yummy little treats. 

Lets call them...

Pumpkin Fritters

21/2 C Flour
1/2 C Powdered Milk
1/2 C Sugar
2 tsp Baking Powder
1 tsp Salt
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Ground Cloves

Mix all together in a medium bowl.  Add:

2 Eggs
11/2 C Water
3 C Peeled, Shredded Raw Pumpkin

Mix well and fry in hot oil until brown on both sides. 
We loved these with maple syrup!  You could also toss in sugar or dust with powdered sugar.
